1  cup egg whites

¼  teaspoon salt

  teaspoon pepper

1  tablespoon olive oil

4  large whole wheat wraps

2  cups fresh spinach, roughly chopped

½  cup feta cheese, crumbled

¼  cup sun-dried tomatoes, finely chopped

¼  cup cottage cheese (optional)

step 1.

Whisk together the egg whites with salt and pepper.

step 2.

Heat up olive oil in non-stick skillet over medium heat, add egg whites, stirring occasionally, until fully set, about 3 to 4 minutes.

step 3.

Warm the whole wheat wraps slightly to make them more pliable.

step 4.

Assemble the wraps by dividing the cooked egg whites, spinach, feta cheese, and sun-dried tomatoes evenly among the wraps. Add cottage cheese if using.

step 5.

Fold in the sides of each wrap slightly and roll tightly from the bottom up. Optional: grill or toast the wraps until golden and crispy, 1 minute on each side.
